The properties, structures and rheology of soft condensed matter and complex fluids such as polymer melts, colloids, gels, liquid crystals and amphiphiles. Basic thermodynamics and dynamics of soft materials and complex fluids found in biological systems are discussed. A wide range of applications in biosoft materials are also exemplified. BNG 414
